The Passion

I have been cooking for over 30 years, from fast food to high-end cuisine. I love checking out local farmer's markets, pickling, making sauces and rubs, and smoking various types of meats. Therefore, it made perfect sense for me to develop my own hot sauce: Satan’s Kiss. This recipe took me over 10 years to perfect, resulting in a well-balanced hot sauce that marries unique flavor with heat.

My love for hot sauce started about 15 years ago, when I wanted to make a wing sauce so hot that it would bring tears to your eyes, while also delivering excellent flavor. As I experimented with recipes over and over again, I found that using fresh peppers was too basic and my sauces had no volume. I then moved on to using dried peppers, which proved to give the sauce a completely different flavor profile. The dried peppers added volume and depth. So I kept playing with various flavor and heat combinations, and Satan’s Kiss was born.

As a chef, when creating a sauce or dish, I find that by planning the outcome of the dish you are actually cheating yourself of true creativity. Sometimes the flavor profiles change throughout the cooking process, forcing you to adapt to different combinations. So my philosophy is to always have a general idea of where you want the dish to go, but let the ingredients take you on their journey. Then they are able to shine with simplicity done right.

NEW! Angel's Descent Dry Rub

A good friend of ours asked us for a special, unique spice mix with the same flavor profile as Satan’s Kiss, so we called upon the heavens to send us an Angel. We took a lot of the same seasonings from Satan’s Kiss and sweetened it up a bit, adding some special spices that encouraged the Descent. This is a very versatile rub that works well with everything: from popcorn, to smoked pork tenderloin, to seared fish.
